That is hard, there are many great ones, hard to choose between games like Rogue Leader, Kotor, Classic Battlefront 2 etc.

The older Battlefront 2 (the one made by LucasArts, not EA), and Star Wars Bounty Hunter.
KOTOR I, KOTOR II, Shadows of The Empire, and Episode 1 Racer also deserve honorable mentions. There’s also a lot of really good Rogue Squadron games. Really, my ‘honorable mentions’ could get extremely bloated.

Shadows of the Empire is my favorite. But honestly, there aren’t that many bad SW games prior to Disney taking over.

Star Wars: Knights of the Old Republic
…in my opinion, no other Star Wars game comes close…except for the sequels: Knights of the Old Republic 2: The Sith Lords, and Star Wars: The Old Republic

Hard to pick one, I’d say my top picks for PC are:
JKII: Jedi Outcast
JK: Jedi Academy
KotOR
KotOR II
Republic Commando
Classic Battlefront
Classic Battlefront II
Empire at War (& Forces of Corruption)
These were my teenage years, man. I loved every minute of them. It’s kind of a shame that it was all downhill for LucasArts from there.
